  • Salt and black pepper to taste
  • Two corn tortillas, cut into strips
  • Juice of 2 limes
  • Hot sauce (optional)
  • ½ avocado, pitted, peeled, and cut into cubes
  • Pickled jalapeños, sliced radishes, fresh cilantro (non-compulsory)

How to Prepare:

  • Get a large pot, heat the oil, and add the onion and garlic until soft and translucent.
  • Pour into a blender and add the tomatoes with juice and chipotle; blend until smooth.
  • Pour back into the pot and add the broth.
  • Leave to simmer.
  • Season all the chicken with pepper and salt. Drop the breasts into the liquid whole. Poach them in the soup until well cooked all the way through, about 10 minutes.
  • Preheat the oven to 450°F. Place the tortilla strips on a baking sheet and bake until lightly brown and crispy.
