  • 1/4 cup coconut oil room temperature

  • 1 tablespoon lime zest
  • 1/2 teaspoon coconut stevia
  • 1/4 cup unsweetened coconut flakes

How to Prepare: 

  • Preheat oven to 350 degrees.
  • Line an 8 by 8 baking pan with parchment paper.
  • Mix the coconut flour, sesame flour, 1/4 cup Swerve together and salt.
  • Blend the coconut oil into the dry ingredients with two butter knives
  • Put this mixture onto the parchment paper and spread as evenly as you can with your hand.
  • Bake for 10 minutes.
  • While the crust is baking, beat the eggs, lime juice, zest, remaining 1 cup Swerve and coconut stevia.
  • When the crust is ready, remove from the oven and pour the egg mixture onto the crust.
  • Sprinkle coconut flakes evenly over the top and bake again for 12-15 minutes
  • Remove from the oven and leave to cool for 10 minutes
  • Separate the baked form from the parchment paper and place on the cutting board

Chocolate Roll Cake

  • 1 cup almond flour
  • 4 tablespoons butter, melted
  • ¼ cup of cocoa powder
  • 1 teaspoon vanilla
  • ¼ cup of coconut milk
  • 1 teaspoon baking powder
  • ¼ cup sour cream
  • 3 large eggs
  • ¼ cup psyllium husk powder
  • ¼ cup erythritol

Cream Cheese Filling

  • 8 ounces cream cheese
  • ¼ cup sour cream
  • 8 tablespoons butter
  • ¼ cup erythritol
  • 1 teaspoon vanilla
  • ¼ teaspoon liquid Stevia

How to Prepare:

  • Put the dry ingredients into a bowl: Almond flour, Psyllium Husk Powder, Cocoa Powder, Erythritol, and Baking Powder.
  • Melt 4 tbsp. of butter in the microwave. Then add the butter, sour cream,  and 3 eggs to the dry ingredients. Use a hand mixer to mix this together.
  • Add between 4 tbsp coconut milk to the batter to make it lighter
  • Spread the batter over a Silpat. Make sure it covers an entire cookie sheet.
  • Bake for 12-15 minutes at 350F.
  • Remove from the oven and set aside to cool while you prepare the cream cheese filling
  • In a bowl, combine all the ingredients for cheese filling and mix very well preferably with a hand mixer.
